Preheat oven to 300 ˚F. Mix together the almond meal and the all-purpose flour. Set aside.
In a separate bowl, combine the butter with the sugar, vanilla and cinnamon. Add in the egg and combine. Add in the lemon zest and combine. Slowly add in the flour mixture and combine.
Roll the dough into balls the size of a walnut and place on a cookie sheet lined with parchment paper. Use your finger to make an indentation in the center of the balls of dough. Bake for 15-20 minutes until lightly brown. Adpated from MamaLisa.com
